{"id":22161,"date":"2025-12-15T12:32:45","date_gmt":"2025-12-15T10:32:45","guid":{"rendered":"https:\/\/www.athenstrainers.gr\/?p=22161"},"modified":"2025-12-15T12:32:45","modified_gmt":"2025-12-15T10:32:45","slug":"healthy-new-years-cake-vasilopita","status":"publish","type":"post","link":"https:\/\/www.athenstrainers.gr\/en\/blog\/healthy-new-years-cake-vasilopita\/","title":{"rendered":"Healthy New Year&#8217;s cake &#8211; Vasilopita"},"content":{"rendered":"<p>Christmas is approaching and the Vasilopita is quite popular!<\/p>\n<p>This particular Vasiplopita is an alternative version of the traditional one,\u00a0 as it contains neither butter nor eggs.<\/p>\n<p><strong>Ingredients<\/strong><br \/>\n-200 g wholemeal flour<br \/>\n-200 g a small cup of yoghurt complete<br \/>\n-100 gr. agave syrup<br \/>\n-120 gr. olive oil<br \/>\n-1 tsp. vanilla extract<br \/>\n-1 tsp. baking powder<br \/>\n-\u00bd tsp. baking soda<br \/>\n-\u00be Cup fresh orange juice<br \/>\n-1 orange Zest of one orange<br \/>\n-40 gr. figs dried<br \/>\n-40 gr. dates Dried<br \/>\n-40 gr. cranberries dried<br \/>\n-40 gr. raisins dried<br \/>\n-60 gr. nuts<br \/>\n-1\/2 mug icing sugar for serving<\/p>\n<p><strong>Instructions<\/strong><br \/>\nCut the dried fruit into small pieces.<br \/>\nIn a small saucepan, add the orange juice and \u00bc cup of water, heat and then add the cut dried fruit.<br \/>\nBoil for 2-3 minutes.<br \/>\nRemove from the heat and allow them to soak for 1-2 hours. Then drain them.<br \/>\nPreheat the oven to 180 C in the air.<br \/>\nLightly grease and flour a 22-24 cm round pan.<br \/>\nIn a bowl, add the flour, baking powder, baking soda, orange zest and mix well.<br \/>\nIn another bowl, add the olive oil, agave syrup, yogurt and vanilla extract and mix well until combined.<br \/>\nTo this mixture add the solid ingredients of the bowl and half of the soaked dried fruit and mix well.<br \/>\nPour the mixture into the baking pan, add the rest of the soaked dried fruits, after draining the mixture and the walnuts and bake for 30-35 minutes at 160o C.<br \/>\nRemove from the oven and let it cool completely on a wire rack.<br \/>\nSprinkle with icing sugar.<\/p>\n<p><img fetchpriority=\"high\" decoding=\"async\" class=\"size-full wp-image-22159 alignnone\" src=\"https:\/\/www.athenstrainers.gr\/wp-content\/uploads\/2025\/12\/img-vasilopita.jpg\" alt=\"\" width=\"672\" height=\"372\" srcset=\"https:\/\/www.athenstrainers.gr\/wp-content\/uploads\/2025\/12\/img-vasilopita.jpg 672w, https:\/\/www.athenstrainers.gr\/wp-content\/uploads\/2025\/12\/img-vasilopita-300x166.jpg 300w\" sizes=\"(max-width: 672px) 100vw, 672px\" \/><\/p>\n<p>Source foodforhealth.gr<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Christmas is approaching and the Vasilopita is quite popular!
