Christmas is approaching and the Vasilopita is quite popular!
This particular Vasiplopita is an alternative version of the traditional one, as it contains neither butter nor eggs.
Ingredients
-200 g wholemeal flour
-200 g a small cup of yoghurt complete
-100 gr. agave syrup
-120 gr. olive oil
-1 tsp. vanilla extract
-1 tsp. baking powder
-½ tsp. baking soda
-¾ Cup fresh orange juice
-1 orange Zest of one orange
-40 gr. figs dried
-40 gr. dates Dried
-40 gr. cranberries dried
-40 gr. raisins dried
-60 gr. nuts
-1/2 mug icing sugar for serving
Instructions
Cut the dried fruit into small pieces.
In a small saucepan, add the orange juice and ¼ cup of water, heat and then add the cut dried fruit.
Boil for 2-3 minutes.
Remove from the heat and allow them to soak for 1-2 hours. Then drain them.
Preheat the oven to 180 C in the air.
Lightly grease and flour a 22-24 cm round pan.
In a bowl, add the flour, baking powder, baking soda, orange zest and mix well.
In another bowl, add the olive oil, agave syrup, yogurt and vanilla extract and mix well until combined.
To this mixture add the solid ingredients of the bowl and half of the soaked dried fruit and mix well.
Pour the mixture into the baking pan, add the rest of the soaked dried fruits, after draining the mixture and the walnuts and bake for 30-35 minutes at 160o C.
Remove from the oven and let it cool completely on a wire rack.
Sprinkle with icing sugar.
